Sweet Almond Crepes

1 cup milk

2/3 cup flour

2 eggs

2 tbs vegetable oil

1/2 tbs sugar

Pinch of salt

1 tsp almond extract

butter for greasing the pan*

  1. Mix together flour and milk.

  2. Add in eggs, oil, sugar, salt and extract. Mix until well until the batter is smooth.

  3. Heat a lightly greased pan over medium heat. * If using a non-stick skillet there isn't a need to grease the pan but the butter taste is a bonus if you still choose to.

  4. Pour the batter onto the pan and spread until only a very thin layer is across the base.

  5. Cook for about a minute on each side.

  6. Remove from pan. Top and fold it however you please.

Tips and Tricks!

Make sure the pan is hot when you pour the batter. This makes it so much easier on you.

Make sure you add the flour to the milk and mix first. This will help your batter to be smooth because the flour doesn't mix well when everything else gets added in together. If there's a couple chunks try to press them out but it won't affect them in the end too much.

If you love almond extract you can add a little extra or you can leave it out and do something different if you hate it. The almond gives it that almond taste but you can use any extract or none at all if you prefer.

When you're cooking the crepes, they should be mostly cooked through when you flip them over. They will be slightly golden on each side.

I typically spread the batter by lifting the pan and tilting it until the batter covers the base.

Our favorite toppings are bananas, strawberries, chocolate, whipped cream, caramel, Nutella, syrup, powdered sugar, but it goes well with most anything

This recipe makes about 6 large crepes. Feel free to multiply if you're feeding lots of people.
