5 medium potatoes
4 tbs butter
4 tbs flour
3 cups milk
Salt to taste
1 tsp garlic powder
1 tsp onion powder
1 tsp paprika
1/4 tsp cayenne pepper
1 cup Monterey cheese plus more for topping
Peel and thinly slice potatoes. Place in a bowl with cold water until ready to use.
Preheat oven to 425
In a medium sauce pan, melt butter over medium heat.
Add in flour until a paste forms. Add in milk and spices mix until completely smooth.
Continue cooking until sauce starts to bubble about 5-7 minutes.
Add in cheese and remove from heat.
Drain potatoes and mix the sauce in until distributed evenly.
Add to a 9x9 baking dish and bake at 425 for about 35 minutes until the potatoes are soft.
Let cool for about 5 minutes and enjoy!
