Sheet Pan Chicken and Veggies

3 tbs avocado oil

1 1/2 lbs chicken breasts

3 bell peppers (We prefer to use colorful but whichever you like.)

1 sweet or purple onion

1 pineapple

salt to taste

paprika to taste

lemon pepper seasoning to taste


  1. Preheat oven to 350. Coat a large cookie sheet in the avocado oil.

  2. Cube the chicken breasts into about one-inch cubes.

  3. Toss the chicken in the paprika, salt and lemon pepper.

  4. Cut the bell peppers into about 1 inch squares.

  5. Peel and core the pineapple, cut into chunks.

  6. Add everything to the cookie sheet and mix well.

  7. Bake for about 25 minutes until chicken is cooked through.

  8. Serve over rice or just plain.
