Sheet Pan Chicken and Veggies

3 tbs avocado oil
1 1/2 lbs chicken breasts
3 bell peppers (We prefer to use colorful but whichever you like.)
1 sweet or purple onion
1 pineapple
salt to taste
paprika to taste
lemon pepper seasoning to taste
- Preheat oven to 350. Coat a large cookie sheet in the avocado oil. 
- Cube the chicken breasts into about one-inch cubes. 
- Toss the chicken in the paprika, salt and lemon pepper. 
- Cut the bell peppers into about 1 inch squares. 
- Peel and core the pineapple, cut into chunks. 
- Add everything to the cookie sheet and mix well. 
- Bake for about 25 minutes until chicken is cooked through. 
- Serve over rice or just plain.
