Peach Cobbler

Ingredients!
8 Fresh Peaches (If they are a little hard it will make your life so much easier when you peel and slice them.)
1/3 cup brown sugar
1/3 cup white sugar
1 tsp lemon juice
1 tbs vanilla
2 tsp cornstarch
1 tsp cinnamon
1/2 tsp nutmeg
Topping
1 1/2 cup flour
1/3 cup brown sugar
1/3 cup sugar
1 1/2 tsp baking powder
1/2 tsp salt
1/2 cup butter cut into chunks
1/3 cup boiling water
Directions
- Preheat oven to 425 degrees. 
- Peel and slice the peaches and add into a 9x9 baking pan. 
- Add brown sugar, sugar, cinnamon, cornstarch, lemon juice, vanilla, and nutmeg to the peaches and mix until the peaches are coated. 
- Bake for 10 minutes and remove from the oven. 
- While that bakes, whisk together flour, sugar, brown sugar, baking powder and salt in a large bowl. 
- Add in butter and mix in until the mixture is crumbly. 
- Pour in the boiling water and mix until combined. 
- Spoon mixture over the peaches making sure you cover the whole tray. 
- **OPTIONAL** Sprinkle the tops with a mixture 4 tsp sugar and 1 1/2 tsp cinnamon. 
- Bake for an additional 35 minutes until the top is golden brown. 
- Serve with your favorite toppings and Enjoy!
