Lamb Breasts


4 lbs lamb breast split into 2 pieces

1 tbs salt

1 tbs pepper

2 teaspoons ground sage

2 teaspoons dried rosemary

1 tbs oil of choice


  1. Preheat Oven to 400 degrees.

  2. In a small bowl, mix together seasonings except the rosemary.

  3. Generously sprinkle the seasonings on the lamb. (If you need more mix more together with the same ratio.)

  4. Use the oil to brush onto a baking sheet. place lamb on the sheet and bake for about 45 minutes for medium well. Internal temperature should be at least 145 degrees.

Tips and Tricks!


You can cook this in a cast iron skillet if you have one that fits the meat. This allows it to almost sear while in the oven. If you use this method make sure to flip the lamb halfway through.


Lamb is a very fatty cut of meat. There will be a lot of fat that is rendered from this so be prepared for this hopefully to make sure the baking dish doesn't overflow into the oven.


As an extra level of flavor, I usually drain about half a cup of the fat rendered into a glass, add in an extra 2 or so teaspoons of the rosemary and about 1 tbs of lemon juice, this is to pour over the meat. The recipe is amazing either way though.
