Ingredients:
1 cup chicken broth
4 large potatoes
1 medium white onion
1 tbs roasted garlic better than bouillon
salt to taste
1 tsp paprika
1 cup heavy cream
Cooked bacon pieces
Chopped chives
sour cream
shredded cheese
Directions:
Peel and chop potatoes. Dice the onion.
Add Chicken broth, better than bouillon base, salt paprika. potatoes and onions into the instapot pot.
Pressure cook on high for 15 minutes, followed by a quick release.
Using an immersion blender, blend the mixture until its a smooth consistency.
Add heavy cream to the soup. Mix well. Check for seasonings to make sure its just how you like.
Top with bacon, chives, sour cream and cheese.
