2 tbs oil
2 cups cooked white rice
1/2 lb diced ham of choice
2 carrots diced
3 green onions chopped
6 eggs
1/4 cup soy sauce
1 tsp ground ginger
2 tsp garlic powder
In a large, deep skillet, add in oil, carrots and green onions. Cook until carrots are almost soft.
Add rice and ham into the pan. Mix well and cook until heated through.
Add in soy sauce and seasonings. Mix well.
Make a well in the middle of the pan. Add in eggs and scramble in the pan.
Once the eggs are cooked completely, mix the rice into the eggs.

Notes:
You can substitute the ham for any meat you choose or no meat at all. The carrots you can use fresh or frozen diced carrots and you can also play around a bit with the veggies you want in the rice. Any vegetables are good in fried rice it depends solely on your preference. The soy sauce is the salt in this dish. Add more or less depending on how salty your soy sauce is and how sensitive you are to salt.
