2 large heads of cauliflower.
2 tbs butter
3 tbs chopped green onions
2 tbs minced garlic
2 tbs flour
2 cups heavy cream
1 cup milk
1 tsp salt
1/4 tsp pepper
1/2 tsp ground sage
1/4 tsp ground cayenne pepper
1 cup shredded colby jack cheese (you can also use cheddar if you prefer.)
1/2 cup shredded parmesan
1/2 cup panko breadcrumbs
2 tbs butter
Steam Cauliflower until crisp tender. Takes about 10 minutes.
Preheat oven to 400
In a large skillet melt butter over medium high heat.
Add in the green onions and garlic. Cook for about a minute until fragrant.
Add in heavy cream, milk and spices. Cook until simmering and it thickens making sure to stir frequently.
Once thickened, stir in the colby jack cheese and remove from heat.
Add the cauliflower and sauce into a 9x13 pan and mix until all the cauliflower is coated evenly.
In a bowl melt the 2 tbs butter and stir in the panko until well mixed. Cover the cauliflower with the mixture and then cover that in the parmesan cheese.
Bake for about 25 minutes until the breadcrumbs and parmesan are golden brown.
Remove from the oven and let cool for about 5 or 10 minutes and Enjoy!
